Tucked into the Charoen Nakhon neighbourhood of Bangkok, we opened just 20 seats and filled them with the warmth of a Roman trattoria. Handmade dough, wood-fired pizza, ingredients chosen the same way every time — with stubbornness and love.
Our dough ferments for 48 hours before it ever meets the fire. The San Marzano tomatoes are crushed by hand. These are not shortcuts we're willing to take.
